Francesca’s Sweet Potato Pasta

Serves 2-3             Prep time 20 minutes ¼# (4 Oz) Olive Destination Sweet Potato Pasta – Boiled to al dente’ in lightly salted water 1 medium Onion – Sliced 3 Cloves Garlic – Chopped 1 Medium – Large Sweet Potato – Cubed * Leave skin on ½ Cup Chicken Broth or white wine ¼ Cup heavy cream or fat-free evaporated milk ¼ Cup shredded Parmesan Cheese Cracked black pepper -Microwave cubed sweet potato cubes until almost tender. -Sauté onion and garlic in Olive Destination E.V.O.O. (e.g. Herb de Provence) until transparent. -Add Sweet Potato to onion & garlic and continue sauté until slightly caramelized. -Add chicken broth or wine –Cook to deglaze pan and reduce slightly. -Add drained pasta and toss. -Add cream – toss and heat through. -Add shredded parmesan, drizzle Olive Destination E.V.O.O. and pepper.   Submitted by Susan Strozdas
