Roasted Winter Squash with Chestnuts
Great side dish paired with turkey or ham. You can roast the squash in advance, then toss them with the crisp bacon and chestnuts just before serving. You can also substitute sweet potato's for the winter squash. I love just about any pickle imaginable. I even enjoy the notion of pickled beets, but rarely have I had a pickled beet that made me swoon... until now. This is an easy recipe and it draws its unique, and addictive flavor from marrying the inherent earthiness of beets with the spicy-sweet tang of hand crafted honey-serrano vinegar. That being said, you could substitute the honey-serrano vinegar with many other options including champagne, white balsamic, Sicilian Lemon balsamic or honey-ginger white balsamic. Spicy Jalapeno-Chipotle Lime Coleslaw
Spicy Jalapeno-Chipotle Lime Coleslaw 1 medium head of cabbage shredded 1 recipe for Chipotle-Lime Aioli (See previous post) 1 large jalapeno, seeded, de-ribbed and finely minced 1 bell pepper, seeded, de-ribbed and finely minced 1/3 cup finely shredded red onion 1 tablespoon lime juice Salt and fresh ground pepper to taste Combine all the ingredients in a large bowl and refrigerate for at least one hour.
