2 C Tomatoes (diced) ¼ C Basil (sliced) ½ C Feta Cheese (fresh mozzarella is traditional) 2 T Red Onion (minced) 1 T Bruschetta Seasoning Mix 2-3 T Olive Destination Basil Flavored Extra Virgin Olive Oil 1-2 T Olive Destination Sherry Vinegar S+P to taste Mix all ingredients together and let macerate (soften with liquid) for about 30 minutes for better flavor Season to taste By Executive Chef Drew Laberis

2 Tbsp Olive Destination Butternut Squash Seed Oil 4 oz herb goat cheese 1/4 cup roasted, salted, pumpkin seeds (pepitas) Olive Destination Delicata Squash Seed Oil for drizzling Preheat oven to 375 degrees F. Brush ficelle slices with butternut squash seed oil and place on baking pan. Bake in preheated oven for 6 minutes or until lightly toasted. Remove from oven and allow to cool.
