Zesty Shrimp Pasta
1 Pkg Olive Destination Tomato Basil Pasta (Regular or Gluten Free)
1 ea Olive Destination Pesto Genovese
1 ea Ripe tomato cut into 1 " chunks
1-2 T Olive Destination Jalapeno Flavored EVOO
1-2 T Olive Destination Pumpkin Seed Oil (Our Garlic or Butter Flavored EVOO would work well also
1 T Heavy Whipping Cream
1 lb Shrimp (peeled, deveined and tail off)
S+P to taste
Cook pasta in salted boiling water until desired tenderness, about 10 minutes (strain, add a little olive oil to keep from sticking and reserve)
Heat the oils on med heat
Add the shrimp, sauté until the shrimp are pink and opaque throughout
Add the pesto and tomato pieces and toss for about 30 seconds, add the pasta and cream, taste/season, toss and serve
